Adapted from The New Farm Vegetarian Cookbook by Hagler and Bates.

2 cups sweet potatoes, pumpkin, or butternut squash, mashed
1 cup soymilk or almond milk
1/2 cup agave syrup
1 Tablespoon blackstrap molasses
3 Tablespoons oil
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon powdered ginger
1/4 teaspoon powdered cloves
1 teaspoon cinnamon
1/4 cup cornstarch or arrowroot powder

Mix mashed vegetable with milk and syrup. Add oil and molasses. Mix the cornstarch with the spices and stir in. Pour into an unbaked pie shell. Bake in a hot oven (425 F) for 10 minutes, then reduce heat to 350 F and bake 40 to 50 minutes until filling is set in the middle.

Hip Whip

I've heard of a product called Hip Whip that is tasty and I have a lot of recipes but none that I've tried. I'm going to post in a couple of vegan communities to see if I can find a "tried and true" version, ok? I'd like one for myself, as well :)
